Our Story
Born from a Kitchen Table, Now on Wheels
It started the way the best meals always do — around a crowded table, with people who wouldn't let you leave until your plate was clean. Momma Imelda's recipes were never written down. They were felt. Passed along by watching, tasting, and showing up with an empty stomach and a willing heart.
When the idea of sharing those flavors with the wider Uvalde community took root, the food truck became the natural answer. No fancy dining room. No pretense. Just the same honest cooking, served hot, right out on the street where folks actually are.
Every dish carries that same spirit — warmth, generosity, and a refusal to cut corners. If it wouldn't pass the test at Momma Imelda's own table, it doesn't make it onto our menu.
